Pork Stir-Fry with Peanuts

Here's a yummy recipe to try when you're craving a little Asian food.

1 pound pork tenderloin, trimmed, and thinly cut into strips
3 tablespoons peanut oil
1 cup onion, coarsley chopped
1 red pepper, sliced
1 zucchini, halved and sliced
8 button mushrooms, halved
1/2 cup low-sodium soy sauce
2 tablespoons wine vinegar
2 tablespoons lemon juice
2 tablespoons brown sugar
2 tablespoons cornstarch
1 tablespoon grated fresh ginger
2 garlic cloves, minced
1/4 teaspoons crushed red pepper
1 1/2 cups dry-roasted peanuts

Heat a large skillet with peanut oil and cook pork strips until browned, 4-6 minutes. Remove from skillet and set aside to keep warm. In remaining oil, saute onion, pepper, zucchini and mushrooms until tender. 

In a small bowl, whisk together soy sauce, vinegar, lemon juice, brown sugar, cornstarch, ginger, and garlic. Pour over vegetables and stir until mixture thickens slightly. Stir in pork and garnish with red pepper and peanuts. Serve over brown rice. (This recipe would also work very well with fresh green beans added to the vegetables.) Serves 4-6.
