In my years growing up, my folks would have other couples over on weekends to play pitch. My mom would always make a batch of homemade ice cream. Sometimes we'd bake a snack cake to go with it. Like this recipe, I hope you'll enjoy!
1/2 cup butter, softened
2 cups sugar
2 eggs
1-16 oz. can applesauce
2 1/2 cups flour
1 1/2 teaspoon soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 teaspoon cloves
3/4 cup chopped raisins
1/2 cup chopped nuts
Preheat oven to 350 degrees. In large mixing bowl, beat together softened butter and sugar for thirty seconds. Add eggs one at a time, mixing well after each. In medium bowl combine flour, baking soda, baking powder, cinnamon, nutmeg and cloves. Add to egg mixture alternately with applesauce until mixed well. Stir in raisins and nuts. Pour into greased square pan. Bake for 45 minutes until done.
