Insert steel knife in food processor.
Add and process until smooth:
3 cups cooked, mashed butternut squash (2 12-oz packages)
8-oz cream cheese
½ cup grated Parmesan cheese
¼ teaspoon pepper
With the processor running, add through the feed tube and process until fully mixed:
1 ½ cups water
Set sauce aside.
Cook and drain 1 pound of your favorite pasta. Place pasta in a casserole dish. Add the sauce and mix thoroughly. Chill several hours or overnight to let sauce absorb into pasta.
Reheat in microwave oven. Makes eight generous servings.
