Kathy's Apple Pandowdy

This is one of my favorite and easiest dessert recipes. Serve it warm with whipped cream or ice cream. It’s also delicious served cold for breakfast. I also make it with fresh blueberries and canned tart cherries or peaches.

2 - 21oz. cans apple pie filling
1 1/4 cup unsifted gluten free flour (use regular flour, if preferred)
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup milk
1/4 cup butter, melted
Additional sugar and nutmeg

Preheat oven to 375 degrees. Spread pie filing evenly in bottom of 12” x 12” baking dish. Set aside.

In a mixing bowl, combine flour, sugar, baking powder, and salt. Add egg, milk, and melted butter. Mix until well-combined. Spoon batter over fruit. Sprinkle with sugar and nutmeg. Bake until the crust is golden brown, about 35-40 minutes. Serve warm or cold, plain or topped with fresh cream, whipped cream, or ice cream.
