Sausage and Rice Skillet

Here's an easy recipe to make when you don't have a lot of time in the kitchen.

14 oz. Beef Smoked Sausage, 1/2" slices
1 medium red bell pepper, chopped
1 carrot, peeled and sliced
1 cup chopped onion
2 garlic cloves, minced
6 oz. package Uncle Ben's Long Grain Wild Rice, prepared as directed
1 teaspoon dried parsley
1/4 teaspoon ground black pepper

In a large skillet over medium-high heat, lightly brown sausage slices. Add bell pepper, carrot, onion, and garlic. Saute until tender, about 4 minutes. Add prepared rice and season with parsley and black pepper. Serves 4-6.
